Introducing Jester King / Kernel Colonel Toby

We’re delighted to introduce Colonel Toby — our collaboration with The Kernel Brewery in London, England! Colonel Toby is a hoppy little farmhouse ale we brewed with Toby Munn of The Kernel at Jester King last fall. Toby was kind enough to stop at Jester King after his multi-month bike tour across America. We’ve long respected Toby for his commitment to balance, simplicity, and restraint when it comes to brewing, so we felt compelled to make a beer that does justice to this philosophy. Colonel Toby is just that — a hoppy, simple little farmhouse ale, that we think is great for casually enjoying with friends and family. That’s what beer is all about, right?
Colonel Toby was brewed on October 24, 2016 with Hill Country well water, 93% Crisp Maris Otter, 7% rolled oats, and Cascade hops. The 1.023 specific gravity (5.8 Plato) wort was fermented in stainless steel with our mixed culture of brewers yeast and native yeast and bacteria. Prior to packaging, it was dry hopped with Citra and Centennial hops. Colonel Toby was packaged on December, 2016 and naturally refermented in bottles and kegs. At the time of packaging, Colonel Toby was 3.4 percent alcohol by volume, 56 IBU, 4.6 pH, and 1.000 specific gravity (0.0 degrees Plato).
Colonel Toby will be released at Jester King on Friday, April 28th at 4pm. It will be available by the glass and in bottles to go (750ml x $9). We have approximately 6,500 bottles available. There’s no bottle limit, and we will be sending Colonel Toby out for distribution beyond Jester King.
