Oak Aged Wild Beer Update

The verdict?…More time. Several of the oak barrels filled with Boxer’s Revenge Farmhouse Provision Ale inoculated with wild yeast and bacteria are starting to mature and develop some nice funk and acidity. But we think they can use another few weeks. We brewed our second batch of Boxer’s Revenge (30 barrels) last week so there won’t be a long lag time between the first and second batch.

We also put Das Wunderkind! Farmhouse Table Beer in oak barrels with wild yeast today. Das is a session strength (~3.9% ABV) farmhouse ale aged in neutral oak barrels with wild yeast.

Our barrel room is getting close to completion as well. It recently was insulated. We’ll keep it at 64 degrees F year-round to provide a good environment for the wild yeast. We estimate we’ll have room for about 300 oak barrels filled with wild beer once its ready.
